Two healthy, flavourful summer recipes to try

With the temperatures rising, maybe it’s time to change up your everyday recipes perfect for the warmer weather. Registered dietitian Michelle Jaelin has a couple of new ideas to try for healthy summer eating.
Cold Sesame Noodle Salad
Ingredients
Honey Soy Dressing
1/4 cup extra virgin olive oil
3 Tbsp sesame oil
1/2 tsp crushed dried red pepper or chili powder
3 Tbsp maple syrup or honey
2 Tbsp low sodium soy sauce
Salad
Salt
375 g (1 package) whole wheat spaghetti
2 cups shelled, frozen edamame
1 whole red bell pepper, diced
1 cup coarsely chopped cilantro
1/3 cup chopped, roasted salted peanuts
1/3 cup thinly sliced green onions
1 Tbsp sesame seeds
Instructions
- Prepare the dressing: Put dressing ingredients into a small saucepan and heat
thoroughly. Remove from heat.
- Salt boiling water and cook spaghetti according to package directions, adding
edamame about halfway through cooking time. Drain.
3. Toss spaghetti with dressing until well coated.
4. Add red peppers, cilantro, peanuts and green onions.
5. Top with sesame seeds and serve!
Tofu Summer Salad
Ingredients
1 Tbsp sweet chili sauce
½ tsp grated fresh gingerroot
2 cloves garlic, crushed
1 Tbsp low sodium soy sauce
1 Tbsp sesame oil
1 package (350 g) extra firm tofu, drained and diced
1 cup snow peas, trimmed
2 small carrots, grated
1 cup finely shredded red cabbage
1 Tbsp chopped peanuts
Instructions
- In a large bowl, mix chili sauce, ginger, garlic soy sauce and sesame oil. Place tofu in the
mixture and marinate in the fridge for 1 hour.
- Bring a pot of water to a boil. Immerse the snow peas in boiling water for 1-2 mins, then
immerse in a bowl of cold water. Drain, set aside.
- Toss peas, carrots, cabbage and peanuts with tofu and marinade and serve.
