Two family-friendly recipes to involve kids in the kitchen

Before the kids go back to school on Monday how about a lesson in the kitchen? Foodland Ontario home economist Teresa Makarewicz joined us with two family-friendly recipes.

Chicken Pot Pie Pizza

In a skillet, cook up some carrots, onions and mushrooms. Whisk 2 tbsp flour into 1 cup of chicken broth and add into skillet with cooked vegetables. Cook until thickened. Add mozzarella and cheddar cheese to the skillet, along with thyme, salt, pepper and red pepper flakes. Top pizza dough with sauce made in skillet, chicken, peas and more cheese. Bake at 500 for 12-15 minutes.

Upside-down Mini Apple Cakes

Divide peeled, sliced Ontario Apples into 12 cup muffin pan brushed with melted butter. Top with brown sugar and cinnamon or nutmeg mixture. Tip: if apples are on the large size, simply cut to fit.

In bowl, whisk dry ingredients. In another bowl, whisk granulated sugar, unsweetened applesauce, and grated lemon rind. Add Ontario egg, oil and vanilla and whisk. Combine wet and dry ingredients. Tip: make your own applesauce – great use for any bruised apples in the fruit crisper.

Spoon batter over apples in the cups. Bake in 350F oven for 15 to 20 minutes until golden and toothpick inserted in centre of cake comes out clean. Serve with scoop of ice cream or whipped cream. Easy and delicious dessert idea or serve at brunch.
