It is National Noodle Month! With so much time spent at home recently, noodles or pasta has been a go-to for many of us. Celebrity chef Cory Vitiello showed us a way to make our noodle dishes more exciting and healthier.

Recipe for the Soba Noodle Bowl

Ingredients:

  • 8oz soba noodles

  • 1 cup strained Dole Mandarin Oranges (save the runoff juice for the dressing)

  • 1 cup shredded red cabbage

  • ½ cup shredded carrots

  • ¼ cup sliced radish

  • 2 cups washed baby spinach

Dressing:

  • 2 tbsp sesame oil

  • 2 tbsp soy sauce

  • Juice from mandarin oranges

  • Juice of 1 lemon

  • Large pinch of salt

Garnish:

  • 2 tbsp toasted sesame seeds

  • 2 tbsp sliced green onion

  • 1 avocado cut into wedges

  • 6 sprigs fresh cilantro (optional)
