How to brew the perfect cup of gourmet coffee

Tim Bolen got a firsthand look at how Balzac’s coffee is made in Ancaster.

Balzac’s Coffee Roasters started in 1993, and their first café opened in Stratford, Ontario in 1996. Now there are 17 cafés across the region all serving up Balzac’s gourmet coffee.

“Coffee is scored on a scale of 0-100, and the coffee we buy is 80 points and above, which makes it specialty coffee.” explained Will Thornburn.

Balzac’s coffee starts with beans from Columbia, Ethiopia and other places in Central and South America and Africa. They then takes those beans and mix them together to make their own blends.

From picking the beans, to roasting to brewing, Tim learned it all before trying a cup of coffee.
