Christmas dinner party on a budget

Spending at Christmas is inevitable but Christian Pritchard is here to show us how to have an entertaining dinner party for four for under $50.
Bacon and Apple soup
Ingredients:
10 slices of bacon, chopped
2 onions, sliced
2 apples, cubed (with skin)
4 cloves of garlic, minced
1 litre of chicken stock
Lots of cracked pepper
Salt to taste
Method: In a large saucepan cook bacon, onions and apples until almost caramelized. Add garlic and cracked pepper to taste. Add chicken broth and simmer for 30 minutes. When slightly thickened use a hand blender and puree. Serve immediately.
Serves 4
The Poinsettia
Ingredients:
1 part Triple Sec (ice cold)
I part Cranberry Juice (ice cold)
1 and half part Zonin Prosecco (well chilled)
In a champagne flute add all ingredients and serve.
