Paul Lillakas recently visited PEI for a mussel farming adventure, and he took things to the grill this morning to make BBQ Curried Mussels with Grilled Bread, which is the perfect dish for the long weekend.

BBQ Curried Mussels with Grilled Bread

Hands on time: 20 minutes / Total Time: 20 minutes / Makes: 4 servings
Ingredients:
2 tbsp salted butter
2 cloves garlic, minced
3 green onions, sliced
2 tsp madras curry powder
½ tsp red chili flakes
Pinch of saffron threads, crushed (optional)
1/2 tsp sea salt
Freshly cracked black pepper
4 lbs soaked and cleaned P.E.I. mussels, beards removed
1 cup dry white wine (such as Sauvignon Blanc)
1 ½ cups 35% whipping cream
Baguette, cut into thick wedges
Olive oil
Cilantro sprigs
Preheat grill on high heat. In cast iron skillet, placed directly onto grill, melt butter. Add garlic, green onion, curry powder, , chili flakes, saffron (if using), salt and pepper. Cook, stirring for 1 minute. Add mussels; toss to coat. Add wine. Cover and steam for 4 minutes. Add cream, and continue to cook, uncovered, until mussels have opened and sauce has thickened enough to coat the back of a spoon, about 5 minutes more. Meanwhile, drizzle bread with oil and grill until charred. Discard any mussels that have not opened. Top with cilantro and serve immediately.
