An easy and kid-friendly weeknight dinner recipe

Chef Paul Lillakas joined us with a kid-friendly recipe to make on those busy weeknights.
Upside-down Sheet Pan Pizza
Hands on time: 30 minutes
Total Time: 2 hours
Makes: 1 pizza
Ingredients:
Dough:
1 cup warm water
1 tbsp granulated sugar
2 tsp quick-rise yeast
2 tbsp olive oil
1 tsp sea salt
2 1/2 cups all-purpose flour (plus more for dusting as needed)
2 tbsp olive oil
1 cup tomato sauce
3 cups shredded mozzarella
In large bowl, combine water, sugar and yeast; let stand until foamy, about 10 minutes. Add oil, salt. Add flour; mix to form ball. Transfer to clean surface and knead until smooth and elastic, about 6-8 minutes. Return to bowl; cover and place in warm place for 1 hour.
Preheat oven to 500F. Line sheet pan with parchment paper.
Stretch or roll dough to edges of pan. Rub with olive oil. Bake just until lightly golden, about 10-12 minutes. Flip crust over, add preferred toppings and return to oven until crust is golden brown and cheese is melted and bubbly, about 10-15 minutes more.
