Recipe:
High Protein Power Balls with Pasta

Servings: 4
Ingredients:
1 pkg (375 g) Catelli Smart® spaghetti
1 filet (300 g) fresh salmon
½ cup (100 g) firm tofu
¼ cup (50 g) quinoa
2 ripe avocados
1 cup (250 ml) light sour cream
salt & pepper to taste
Garnish: cilantro, chopped finely
(can also top with shaved parmesan)
Instructions:
Step 1: Boil the quinoa in salted water until soft( this can be done the day before).
Step 2: Grind the salmon, tofu and quinoa together. Season with salt and pepper.
Step 3: Form small balls and bake at 350°F for approximately 20 minutes.
Step 4: Mash the avocado flesh and blend smooth with the sour cream.
Step 5: Boil pasta as per box instructions.
Step 6: Heat sour cream and avocado in a large pan. Toss with cooked pasta.
Step 7: Serve topped with meatballs and chopped cilantro.
Tip: Ripe avocados are key to a smooth, flavourful sauce. To tell if an avocado is ripe, squeeze it softly – if it’s soft to the touch, then it’s ripe!
